- Pork shank - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Red wine - 100 ml
- Beef broth - 250 ml
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for gremolata)
- Lemon zest - from 1 lemon (for gremolata)
- Garlic - 1 clove, minced (for gremolata)
Steps
- Heat the olive oil in a large, heavy-bottomed pot over medium heat.
- Season the pork shanks with salt and black pepper, then sear them in the hot oil until browned on all sides, about 8-10 minutes. Remove and set aside.
- In the same pot, add the diced onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the dried oregano and thyme, cooking for another minute until fragrant.
- Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for 3-4 minutes until slightly reduced.
- Add the beef broth, bay leaf, and the seared pork shanks back to the pot. Bring to a gentle simmer.
- Cover the pot and reduce the heat to low, allowing to braise for about 1 hour and 30 minutes, or until the pork is fork-tender.
- While the pork is cooking, prepare the gremolata by mixing the chopped parsley, lemon zest, and minced garlic in a small bowl.
- Once the pork is done, remove it from the pot and let it rest for a few minutes before serving.
- Serve the pork osso buco topped with the fresh gremolata.
