Ingredients

  • Pork shank - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Red wine - 100 ml
  • Beef broth - 250 ml
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for gremolata)
  • Lemon zest - from 1 lemon (for gremolata)
  • Garlic - 1 clove, minced (for gremolata)

Steps

  1. Heat the olive oil in a large, heavy-bottomed pot over medium heat.
  2. Season the pork shanks with salt and black pepper, then sear them in the hot oil until browned on all sides, about 8-10 minutes. Remove and set aside.
  3. In the same pot, add the diced onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the dried oregano and thyme, cooking for another minute until fragrant.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for 3-4 minutes until slightly reduced.
  6. Add the beef broth, bay leaf, and the seared pork shanks back to the pot. Bring to a gentle simmer.
  7. Cover the pot and reduce the heat to low, allowing to braise for about 1 hour and 30 minutes, or until the pork is fork-tender.
  8. While the pork is cooking, prepare the gremolata by mixing the chopped parsley, lemon zest, and minced garlic in a small bowl.
  9. Once the pork is done, remove it from the pot and let it rest for a few minutes before serving.
  10. Serve the pork osso buco topped with the fresh gremolata.
