Ingredients

  • Pork loin - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice to create a marinade.
  3. Place the pork loin in a shallow dish and pour the marinade over the meat, ensuring it is well coated. Cover and let it marinate for at least 20 minutes.
  4. Heat an oven-safe skillet over medium heat. Once hot, sear the marinated pork loin on all sides until browned, about 3-4 minutes per side.
  5. Transfer the skillet to the preheated oven and roast the pork loin for 20-25 minutes, or until the internal temperature reaches 63°C (145°F).
  6. Remove the pork from the oven and let it rest for 5 minutes before slicing.
  7. Serve the sliced pork loin with the pan juices drizzled over the top.
