Ingredients

  • Pork loin - 300 grams, thinly sliced
  • Fresh spinach - 100 grams, chopped
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato sauce - 100 grams, low-carb version
  • Mozzarella cheese - 50 grams, shredded

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, grated Parmesan, cooked spinach, chopped basil, salt, and black pepper. Mix well to combine.
  5. Lay the thinly sliced pork loin on a clean surface. Place a spoonful of the spinach and cheese mixture at one end of each slice and roll up tightly. Secure with toothpicks if necessary.
  6. In an oven-safe dish, spread the low-carb tomato sauce evenly on the bottom. Place the pork involtini seam-side down on top of the sauce.
  7. Drizzle the remaining tablespoon of olive oil over the top of the involtini and sprinkle with shredded mozzarella cheese.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
