- Red onion - 1 small, thinly sliced
- Apple cider vinegar - 3 tablespoons
- Erythritol - 1 tablespoon
- Capers - 1 tablespoon, rinsed and drained
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Season the pork loin with salt and black pepper, then add it to the skillet, browning on all sides for about 8-10 minutes.
- Remove the pork loin from the skillet and set aside.
- In the same skillet, add minced garlic and sliced red onion, cooking until the onion is softened, about 3-4 minutes.
- Stir in the apple cider vinegar, erythritol, and capers, scraping up any browned bits from the bottom of the skillet.
- Add the pork loin back into the skillet and sprinkle with chopped rosemary, then reduce the heat to low.
- Cover and simmer for an additional 10-15 minutes, or until the pork is cooked through (internal temperature of 145°F or 63°C).
