Ingredients

  • Pork loin - 300 grams
  • Olive oil - 2 tablespoons

  • Red onion - 1 small, thinly sliced
  • Apple cider vinegar - 3 tablespoons
  • Erythritol - 1 tablespoon
  • Capers - 1 tablespoon, rinsed and drained
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the pork loin with salt and black pepper, then add it to the skillet, browning on all sides for about 8-10 minutes.
  3. Remove the pork loin from the skillet and set aside.
  4. In the same skillet, add minced garlic and sliced red onion, cooking until the onion is softened, about 3-4 minutes.
  5. Stir in the apple cider vinegar, erythritol, and capers, scraping up any browned bits from the bottom of the skillet.
  6. Add the pork loin back into the skillet and sprinkle with chopped rosemary, then reduce the heat to low.
  7. Cover and simmer for an additional 10-15 minutes, or until the pork is cooked through (internal temperature of 145°F or 63°C).
  8. Remove the pork from the skillet, let it rest for a few minutes, then slice and serve with the agrodolce sauce drizzled over the top.
