- Pork chops - 2 (about 200g each)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Canned crushed tomatoes - 400g
- Dried oregano - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Fresh basil leaves - 6, torn
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30g, grated (optional)
Steps
- Heat olive oil in a large skillet over medium heat.
- Season the pork chops with salt and black pepper on both sides.
- Add the pork chops to the skillet and sear for about 4-5 minutes on each side until browned. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the crushed tomatoes, and stir in the dried oregano and red pepper flakes. Simmer for about 5 minutes.
- Return the pork chops to the skillet, spooning some of the sauce over them, and let it simmer in the sauce for an additional 10 minutes, or until the pork is cooked through.
- Stir in the fresh basil and adjust seasoning as needed.
- Serve hot, garnished with grated Parmesan cheese if desired.
