  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced

Steps

  1. In a bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice to create a marinade.
  2. Place the pork chops in the marinade, making sure they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, toss the sliced zucchini and bell pepper with a bit of olive oil, salt, and pepper.
  5. Remove the pork chops from the marinade and let any excess drip off.
  6. Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
  7. During the last few minutes of grilling, add the zucchini and bell pepper to the grill and cook until tender, about 5-6 minutes.
  8. Remove the pork chops and vegetables from the grill and let the chops rest for 5 minutes before serving.
