- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
Steps
- In a bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice to create a marinade.
- Place the pork chops in the marinade, making sure they are well coated. Cover and refrigerate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- While the grill is heating, toss the sliced zucchini and bell pepper with a bit of olive oil, salt, and pepper.
- Remove the pork chops from the marinade and let any excess drip off.
- Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
- During the last few minutes of grilling, add the zucchini and bell pepper to the grill and cook until tender, about 5-6 minutes.
