Ingredients

  • Ground halal pork - 300 grams
  • Fennel seeds - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, finely chopped
  • Fresh sage - 1 tablespoon, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Brioche burger buns - 2
  • Arugula - 50 grams
  • Tomato - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Garlic aioli - 4 tablespoons

Steps

  1. In a bowl, mix the ground halal pork with fennel seeds, minced garlic, chopped rosemary, chopped sage, salt, and black pepper until well combined.
  2. Form the mixture into two equal patties, about 1.5 cm thick.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for 5-6 minutes on each side, or until they reach an internal temperature of 70°C.
  4. While the burgers are cooking, lightly toast the brioche buns in a separate pan until golden brown.
  5. Assemble the burgers by placing a cooked patty on each bun, then top with garlic aioli, arugula, sliced tomato, and red onion.
  6. Serve immediately with your choice of side.
