Ingredients

  • Pork belly - 500 grams
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Fresh sage - 1 tablespoon, chopped
  • Fennel seeds - 1 teaspoon, crushed
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a bowl, combine minced garlic, rosemary, sage, crushed fennel seeds, salt, black pepper, olive oil, lemon zest, and red pepper flakes to create a seasoning paste.
  3. Lay the pork belly skin-side down on a clean surface and score the meat in a crisscross pattern, being careful not to cut through the skin.
  4. Rub the seasoning paste all over the meat, ensuring it's well-coated, then roll the pork belly tightly from one end to the other.
  5. Tie the rolled porchetta securely with kitchen twine at 1-inch intervals.
  6. Place the porchetta seam-side down on a roasting rack in a baking dish and roast in the preheated oven for 2 hours, or until the internal temperature reaches 75°C (165°F).
  7. Increase the oven temperature to 220°C (428°F) and roast for an additional 30 minutes to crisp the skin.
  8. Remove from the oven and let it rest for 15 minutes before slicing and serving.
