Ingredients

  • 2 large ripe tomatoes
  • 100g ground beef
  • 50g grated Parmesan cheese
  • 30g almond flour
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt - to taste
  • Pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and scoop out the insides with a spoon, being careful not to break the skin.
  3. In a skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
  4. Add the ground beef to the skillet, cooking until browned and cooked through; season with salt, pepper, and oregano.
  5. Remove the skillet from heat and stir in almond flour and half of the Parmesan cheese until well combined.
  6. Stuff each hollowed tomato with the beef mixture, pressing down gently to pack it in.
  7. Place the stuffed tomatoes in a baking dish and sprinkle the remaining Parmesan cheese on top.
  8. Bake in the preheated oven for about 20 minutes, or until the tomatoes are tender and the cheese is golden.
  9. Remove from the oven and let cool for a few minutes before garnishing with fresh basil leaves.
  10. Serve warm as a delightful side dish.
