- 2 large ripe tomatoes
- 100g ground beef
- 50g grated Parmesan cheese
- 30g almond flour
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt - to taste
- Pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the tomatoes and scoop out the insides with a spoon, being careful not to break the skin.
- In a skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
- Add the ground beef to the skillet, cooking until browned and cooked through; season with salt, pepper, and oregano.
- Remove the skillet from heat and stir in almond flour and half of the Parmesan cheese until well combined.
- Stuff each hollowed tomato with the beef mixture, pressing down gently to pack it in.
- Place the stuffed tomatoes in a baking dish and sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for about 20 minutes, or until the tomatoes are tender and the cheese is golden.
- Remove from the oven and let cool for a few minutes before garnishing with fresh basil leaves.
- Serve warm as a delightful side dish.
