Ingredients
- green lentils - 100 grams
- water - 250 ml
- carrot - 1 medium, grated
- zucchini - 1 small, grated
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- fresh parsley - 2 tablespoons, chopped
- nutritional yeast - 2 tablespoons
- ground flaxseed - 1 tablespoon
- breadcrumbs - 50 grams
- olive oil - 1 tablespoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- dried oregano - 1 teaspoon
- whole grain burger buns - 2
- lettuce - 2 leaves
- tomato - 1 medium, sliced
- avocado - 1/2, sliced
Steps
- Rinse the green lentils under cold water and place them in a pot with 250 ml of water. Bring to a boil, then reduce to a simmer and cook for about 20 minutes or until tender. Drain any excess water.
- In a large mixing bowl, combine the cooked lentils, grated carrot, grated zucchini, chopped red onion, minced garlic, chopped parsley, nutritional yeast, ground flaxseed, breadcrumbs, olive oil, salt, black pepper, and dried oregano. Mix thoroughly until well combined.
- Using your hands, form the mixture into 2 equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and firm.
- While the patties are cooking, lightly toast the burger buns in the oven or on a skillet.
- Assemble the burgers by placing each patty on a bun and topping with lettuce, tomato slices, and avocado. Serve immediately.
