- Paprika - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons
- Water - 2 tablespoons
- Breadcrumbs - 50 grams
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, minced garlic, chopped parsley, chickpea flour, nutritional yeast, salt, black pepper, paprika, and water. Mix well until combined.
- Form the mixture into small patties, about the size of your palm, and coat each patty lightly with breadcrumbs.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the skillet, cooking for about 5 minutes on each side or until golden brown.
