Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 50 grams

  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Water - 2 tablespoons
  • Breadcrumbs - 50 grams

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, minced garlic, chopped parsley, chickpea flour, nutritional yeast, salt, black pepper, paprika, and water. Mix well until combined.
  3. Form the mixture into small patties, about the size of your palm, and coat each patty lightly with breadcrumbs.
  4. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the skillet, cooking for about 5 minutes on each side or until golden brown.
  5. Once cooked, remove the patties from the skillet and let them rest on a paper towel to absorb any excess oil before serving.
