Ingredients
- Firm tofu - 300 grams
- Breadcrumbs - 100 grams
- Fresh parsley - 30 grams, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Egg or flax egg (1 tbsp ground flaxseed + 2.5 tbsp water) - 1
Steps
- Preheat your oven to 200°C (400°F).
- Drain the firm tofu and press it between paper towels to remove excess moisture.
- In a large bowl, crumble the tofu with your hands until it resembles a fine texture.
- Add breadcrumbs, chopped parsley, minced garlic, chopped onion, nutritional yeast, olive oil, salt, black pepper, paprika, oregano, and the egg (or flax egg) to the bowl.
- Mix all the ingredients thoroughly until well combined.
- Form the mixture into small patties, about 5 cm in diameter.
- Place the patties on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and firm.
- Serve hot with your favorite sauces or in a burger bun with fresh vegetables.
