Ingredients

  • Firm tofu - 300 grams
  • Breadcrumbs - 100 grams
  • Fresh parsley - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Egg or flax egg (1 tbsp ground flaxseed + 2.5 tbsp water) - 1

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Drain the firm tofu and press it between paper towels to remove excess moisture.
  3. In a large bowl, crumble the tofu with your hands until it resembles a fine texture.
  4. Add breadcrumbs, chopped parsley, minced garlic, chopped onion, nutritional yeast, olive oil, salt, black pepper, paprika, oregano, and the egg (or flax egg) to the bowl.
  5. Mix all the ingredients thoroughly until well combined.
  6. Form the mixture into small patties, about 5 cm in diameter.
  7. Place the patties on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and firm.
  9. Serve hot with your favorite sauces or in a burger bun with fresh vegetables.
