- Fresh spinach - 200g
- Whole wheat breadcrumbs - 100g
- Ricotta cheese - 100g
- Parmesan cheese, grated - 30g
- Garlic, minced - 1 clove
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- Wash the spinach thoroughly and steam it for about 3-4 minutes until wilted, then drain and chop finely.
- In a large bowl, combine the chopped spinach, whole wheat breadcrumbs, ricotta cheese, grated Parmesan, minced garlic, egg, salt, black pepper, and nutmeg. Mix well until combined.
- Form the mixture into patties, about 5 cm in diameter.
- Heat olive oil in a non-stick skillet over medium heat and cook the patties for about 3-4 minutes on each side until golden brown.
- Transfer the cooked patties to a baking sheet and bake in the preheated oven for an additional 10 minutes to ensure they are cooked through.
- Serve warm, optionally with whole grain buns and your choice of toppings.
