Ingredients

  • Fresh spinach - 200g
  • Whole wheat breadcrumbs - 100g
  • Ricotta cheese - 100g
  • Parmesan cheese, grated - 30g
  • Garlic, minced - 1 clove
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash the spinach thoroughly and steam it for about 3-4 minutes until wilted, then drain and chop finely.
  3. In a large bowl, combine the chopped spinach, whole wheat breadcrumbs, ricotta cheese, grated Parmesan, minced garlic, egg, salt, black pepper, and nutmeg. Mix well until combined.
  4. Form the mixture into patties, about 5 cm in diameter.
  5. Heat olive oil in a non-stick skillet over medium heat and cook the patties for about 3-4 minutes on each side until golden brown.
  6. Transfer the cooked patties to a baking sheet and bake in the preheated oven for an additional 10 minutes to ensure they are cooked through.
  7. Serve warm, optionally with whole grain buns and your choice of toppings.
