Ingredients

  • Cooked Arborio rice - 200 grams
  • Egg - 1 large
  • Grated Parmesan cheese - 50 grams
  • Chopped fresh parsley - 2 tablespoons
  • Chopped spinach - 50 grams
  • Garlic (minced) - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons

Steps

  1. In a large bowl, combine the cooked Arborio rice, egg, grated Parmesan cheese, chopped parsley, chopped spinach, minced garlic, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small patties, about 5 cm in diameter.
  3. Coat each patty in breadcrumbs to create a crispy exterior.
  4. Heat the olive oil in a non-stick skillet over medium heat.
  5. Add the patties to the skillet and cook for about 4-5 minutes on each side or until golden brown and crispy.
  6. Remove from the skillet and let them rest on paper towels to absorb excess oil before serving.
