Steps
- In a large bowl, combine the cooked Arborio rice, egg, grated Parmesan cheese, chopped parsley, chopped spinach, minced garlic, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties, about 5 cm in diameter.
- Coat each patty in breadcrumbs to create a crispy exterior.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the patties to the skillet and cook for about 4-5 minutes on each side or until golden brown and crispy.
