  • Almond flour - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams (for garnish)
  • Fresh basil leaves - a handful (for garnish)

Steps

  1. In a large bowl, combine ground chicken, pesto sauce, almond flour, grated Parmesan, egg, garlic powder, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 4 cm in diameter.
  3. In a large skillet, heat olive oil over medium heat. Add the meatballs and cook for about 10-12 minutes, turning occasionally, until golden brown and cooked through.
  4. While the meatballs are cooking, halve the cherry tomatoes and set aside.
