Ingredients

  • Ground chicken - 400 grams
  • Almond flour - 30 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Canned crushed tomatoes - 200 grams
  • Italian seasoning - 1 teaspoon

Steps

  1. In a large mixing bowl, combine the ground chicken, almond flour, grated Parmesan cheese, egg, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 4 cm in diameter.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally until they are browned on all sides.
  4. While the meatballs are cooking, in a separate saucepan, combine the crushed tomatoes and Italian seasoning. Simmer over low heat for about 5 minutes.
  5. Once the meatballs are cooked through, pour the tomato sauce over them in the skillet. Cover and let simmer together for an additional 5 minutes.
  6. Serve hot, garnished with additional parsley if desired.
