Ingredients

  • Cannellini beans - 400 grams (canned, drained and rinsed)
  • Gluten-free breadcrumbs - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Lettuce leaves - 2 (for serving)
  • Tomato - 1, sliced (for serving)
  • Red onion - 1/4, thinly sliced (for serving)

Steps

  1. In a large bowl, mash the drained cannellini beans with a fork or potato masher until mostly smooth with some chunks left for texture.
  2. Add the gluten-free breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, egg, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into 4 equal-sized patties, about 1.5 cm thick.
  4. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the patties to the skillet, cooking for about 5-7 minutes on each side or until golden brown and crispy.
  5. Remove the patties from the skillet and let them rest on a paper towel to absorb excess oil.
  6. Serve the polpette on lettuce leaves topped with sliced tomato and red onion.
