Ingredients

  • Ground beef - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons for frying
  • Zucchini - 1 medium, spiralized (for serving)

Steps

  1. In a large mixing bowl, combine the ground beef, almond flour, egg, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into small meatballs, about 3-4 cm in diameter.
  3. Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches to avoid overcrowding.
  4. Cook the meatballs for about 8-10 minutes, turning occasionally until they are browned on all sides and cooked through.
  5. While the meatballs are cooking, prepare the spiralized zucchini as a fresh pasta alternative.
  6. Once the meatballs are ready, remove them from the skillet and serve over the spiralized zucchini.
