  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved

Steps

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, prepare the vegetables by tossing zucchini, red bell pepper, and cherry tomatoes with a little olive oil, salt, and pepper.
  5. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  6. In the last 5 minutes of grilling, add the prepared vegetables to the grill, cooking until they are tender and slightly charred.
  7. Serve the grilled chicken alongside the vegetables and garnish with additional fresh herbs if desired.
