- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
Steps
- In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- While the grill is heating, prepare the vegetables by tossing zucchini, red bell pepper, and cherry tomatoes with a little olive oil, salt, and pepper.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- In the last 5 minutes of grilling, add the prepared vegetables to the grill, cooking until they are tender and slightly charred.
- Serve the grilled chicken alongside the vegetables and garnish with additional fresh herbs if desired.
