  • Fresh rosemary - 1 sprig
  • Fresh thyme - 1 sprig
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear for about 5-7 minutes until golden brown.
  2. Flip the chicken thighs and add minced garlic and shallots to the skillet. Cook for another 3-4 minutes until the shallots become translucent.
  3. Pour in the white wine and chicken broth. Add the rosemary and thyme sprigs, and bring the mixture to a gentle simmer.
  4. Reduce the heat to low, cover the skillet, and let it cook for about 25 minutes, or until the chicken is cooked through and tender.
  5. Add the halved cherry tomatoes in the last 5 minutes of cooking, allowing them to soften.
  6. Remove the herbs before serving and garnish with chopped parsley.
