- Fresh thyme - 1 sprig
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear for about 5-7 minutes until golden brown.
- Flip the chicken thighs and add minced garlic and shallots to the skillet. Cook for another 3-4 minutes until the shallots become translucent.
- Pour in the white wine and chicken broth. Add the rosemary and thyme sprigs, and bring the mixture to a gentle simmer.
- Reduce the heat to low, cover the skillet, and let it cook for about 25 minutes, or until the chicken is cooked through and tender.
- Add the halved cherry tomatoes in the last 5 minutes of cooking, allowing them to soften.
- Remove the herbs before serving and garnish with chopped parsley.
