- Chicken thighs - 400 grams
- Red wine (dry) - 200 ml
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Mushrooms - 150 grams, sliced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 100 ml
- Parmesan cheese - 30 grams, grated (for serving)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
- Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms release their juices.
- Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
- Add the thyme and rosemary, then return the chicken thighs to the skillet.
- Cover and simmer for 25 minutes, or until the chicken is cooked through and tender.
- Serve hot, topped with grated Parmesan cheese.
