Ingredients

  • Chicken thighs - 400 grams
  • Red wine (dry) - 200 ml
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Mushrooms - 150 grams, sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chicken broth - 100 ml
  • Parmesan cheese - 30 grams, grated (for serving)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
  4. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms release their juices.
  5. Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
  6. Add the thyme and rosemary, then return the chicken thighs to the skillet.
  7. Cover and simmer for 25 minutes, or until the chicken is cooked through and tender.
  8. Serve hot, topped with grated Parmesan cheese.
