Ingredients

  • Chicken breast - 300 grams
  • Fresh thyme - 2 tablespoons, chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Cherry tomatoes - 150 grams, halved
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a bowl, combine the chopped fresh thyme, minced garlic, olive oil, salt, and black pepper to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it is well coated. Cover and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, heat a non-stick skillet over medium heat.
  4. Add the marinated chicken breast to the skillet and cook for about 6-7 minutes on each side or until fully cooked and golden brown.
  5. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
  6. In the same skillet, add the sliced zucchini and bell pepper. Sauté for about 5 minutes until they are tender.
  7. Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes.
  8. Serve the sliced chicken on a plate with the sautéed vegetables on the side, and sprinkle with grated Parmesan cheese if desired.
