Ingredients

  • Chicken thighs - 400 grams
  • Fresh rosemary - 2 sprigs
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Allow to marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare a baking dish by placing the halved cherry tomatoes at the bottom.
  5. Place the marinated chicken thighs on top of the cherry tomatoes in the baking dish.
  6. Tuck the fresh rosemary sprigs around the chicken for added flavor.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and has a nice golden-brown color.
  8. Remove from the oven and let it rest for 5 minutes before serving.
