- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Allow to marinate for at least 15 minutes.
- While the chicken is marinating, prepare a baking dish by placing the halved cherry tomatoes at the bottom.
- Place the marinated chicken thighs on top of the cherry tomatoes in the baking dish.
- Tuck the fresh rosemary sprigs around the chicken for added flavor.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and has a nice golden-brown color.
