Ingredients

  • 2 chicken breasts - 250 grams each
  • 4 tablespoons basil pesto - 60 grams
  • 1 tablespoon olive oil - 15 ml
  • 1 teaspoon garlic powder - 5 grams
  • Salt - to taste
  • Black pepper - to taste
  • 50 grams cherry tomatoes - halved
  • 30 grams grated Parmesan cheese - for garnish
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. In a bowl, mix the olive oil, garlic powder, salt, and black pepper to create a marinade.
  3. Coat the chicken breasts with the marinade, then spread 2 tablespoons of basil pesto evenly over each piece.
  4. Let the chicken marinate for at least 10 minutes while the grill heats up.
  5. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  6. During the last few minutes of cooking, add the halved cherry tomatoes to the grill to slightly char them.
  7. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  8. Slice the chicken and serve it topped with the remaining basil pesto, grilled cherry tomatoes, grated Parmesan cheese, and fresh basil leaves.
