- 2 chicken breasts - 250 grams each
- 4 tablespoons basil pesto - 60 grams
- 1 tablespoon olive oil - 15 ml
- 1 teaspoon garlic powder - 5 grams
- Salt - to taste
- Black pepper - to taste
- 50 grams cherry tomatoes - halved
- 30 grams grated Parmesan cheese - for garnish
- Fresh basil leaves - for garnish
Steps
- Preheat your grill or stovetop grill pan over medium heat.
- In a bowl, mix the olive oil, garlic powder, salt, and black pepper to create a marinade.
- Coat the chicken breasts with the marinade, then spread 2 tablespoons of basil pesto evenly over each piece.
- Let the chicken marinate for at least 10 minutes while the grill heats up.
- Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- During the last few minutes of cooking, add the halved cherry tomatoes to the grill to slightly char them.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes.
- Slice the chicken and serve it topped with the remaining basil pesto, grilled cherry tomatoes, grated Parmesan cheese, and fresh basil leaves.
