Steps
- In a medium saucepan, bring 500 milliliters of water to a boil. Add 1 teaspoon of salt.
- Gradually whisk in 100 grams of cornmeal, stirring constantly to prevent lumps.
- Reduce heat to low and cook for about 15-20 minutes, stirring frequently until the polenta is thick and creamy.
- Stir in 2 tablespoons of olive oil and 30 grams of grated Parmesan cheese until well combined. Remove from heat and set aside.
- In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach the eggs for 3-4 minutes until the whites are set but the yolks remain runny.
