Steps

  1. In a medium saucepan, bring 500 milliliters of water to a boil. Add 1 teaspoon of salt.
  2. Gradually whisk in 100 grams of cornmeal, stirring constantly to prevent lumps.
  3. Reduce heat to low and cook for about 15-20 minutes, stirring frequently until the polenta is thick and creamy.
  4. Stir in 2 tablespoons of olive oil and 30 grams of grated Parmesan cheese until well combined. Remove from heat and set aside.
  5. In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach the eggs for 3-4 minutes until the whites are set but the yolks remain runny.
  6. To serve, spoon the creamy polenta into two bowls, top each with two poached eggs, and sprinkle with fresh parsley and black pepper to taste.
