- Polenta - 200 grams

- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams, halved
- Parmesan cheese - 30 grams, grated (optional for serving)
Steps
- In a saucepan, bring the vegetable broth to a boil and add the salt.
- Gradually whisk in the polenta and reduce the heat to low, stirring continuously for about 15-20 minutes until thickened.
- Once the polenta is cooked, stir in the olive oil, minced garlic, chopped basil, and dried oregano. Mix well and adjust seasoning with salt and pepper.
- Pour the polenta into a greased dish, spreading it evenly. Allow it to cool and set for at least 20 minutes.
- Preheat the grill to medium-high heat.
- Once the polenta is set, cut it into squares or rectangles. Brush each piece lightly with olive oil.
- Grill the polenta pieces for about 4-5 minutes on each side until grill marks appear and it's heated through.
- While the polenta is grilling, prepare the tomato sauce by mixing the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper in a bowl.
- Serve the grilled polenta topped with the fresh tomato mixture and garnish with grated Parmesan cheese and extra basil if desired.
