Ingredients

  • Polenta - 200 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 1 tablespoon, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Parmesan cheese - 30 grams, grated (optional for serving)

Steps

  1. In a saucepan, bring the vegetable broth to a boil and add the salt.
  2. Gradually whisk in the polenta and reduce the heat to low, stirring continuously for about 15-20 minutes until thickened.
  3. Once the polenta is cooked, stir in the olive oil, minced garlic, chopped basil, and dried oregano. Mix well and adjust seasoning with salt and pepper.
  4. Pour the polenta into a greased dish, spreading it evenly. Allow it to cool and set for at least 20 minutes.
  5. Preheat the grill to medium-high heat.
  6. Once the polenta is set, cut it into squares or rectangles. Brush each piece lightly with olive oil.
  7. Grill the polenta pieces for about 4-5 minutes on each side until grill marks appear and it's heated through.
  8. While the polenta is grilling, prepare the tomato sauce by mixing the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper in a bowl.
  9. Serve the grilled polenta topped with the fresh tomato mixture and garnish with grated Parmesan cheese and extra basil if desired.
