Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Fresh basil - 10 grams
  • Garlic powder - 1/2 teaspoon
  • Oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
  3. Drizzle olive oil over the eggplant slices and sprinkle with salt, black pepper, garlic powder, and oregano.
  4. Bake the eggplant in the preheated oven for 15 minutes until they are tender and slightly golden.
  5. Remove the eggplant from the oven and spread a thin layer of tomato sauce on each slice.
  6. Sprinkle nutritional yeast on top of the tomato sauce and return the eggplant to the oven for an additional 5 minutes.
  7. Remove from the oven, garnish with fresh basil leaves, and serve immediately.
