- Nutritional yeast - 2 tablespoons

Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
- Drizzle olive oil over the eggplant slices and sprinkle with salt, black pepper, garlic powder, and oregano.
- Bake the eggplant in the preheated oven for 15 minutes until they are tender and slightly golden.
- Remove the eggplant from the oven and spread a thin layer of tomato sauce on each slice.
- Sprinkle nutritional yeast on top of the tomato sauce and return the eggplant to the oven for an additional 5 minutes.
- Remove from the oven, garnish with fresh basil leaves, and serve immediately.
