Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Tomato sauce - 100 grams
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 50 grams, sliced
  • Red onion - 50 grams, thinly sliced
  • Black olives - 30 grams, pitted and sliced
  • Dried oregano - 1 teaspoon
  • Fresh basil leaves - 10 grams, for garnish

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until the dough starts to come together, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat your oven to 250°C (482°F) and place a pizza stone or baking sheet inside to heat.
  6. Once the dough has risen, punch it down and roll it out on a floured surface to approximately 30 cm in diameter.
  7. Transfer the rolled dough to a piece of parchment paper for easy handling.
  8. Spread the tomato sauce evenly over the base, leaving a small border around the edges.
  9. Arrange the sliced zucchini, red bell pepper, red onion, and black olives on top of the sauce.
  10. Sprinkle dried oregano over the vegetables and drizzle a little olive oil if desired.
  11. Carefully slide the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet.
  12. Bake for 10-12 minutes or until the crust is golden and crispy.
  13. Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
