Ingredients

  • 00 flour - 250 grams
  • water - 150 ml
  • sea salt - 5 grams
  • active dry yeast - 3 grams
  • extra virgin olive oil - 10 ml
  • San Marzano tomatoes - 200 grams
  • fresh basil leaves - a handful
  • vegan mozzarella cheese - 100 grams
  • black pepper - to taste

Steps

  1. In a bowl, dissolve the active dry yeast in the lukewarm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the 00 flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until the dough starts to come together, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 60 minutes or until doubled in size.
  5. While the dough is rising, prepare the sauce by crushing the San Marzano tomatoes in a bowl, then season with salt and black pepper to taste.
  6. Preheat your oven to the highest setting (around 250°C or 482°F) and place a pizza stone or baking tray inside to heat.
  7. Once the dough has risen, punch it down and divide it into two equal portions. Shape each portion into a ball and let them rest for another 10 minutes.
  8. On a floured surface, stretch each dough ball into a round pizza base, about 10-12 inches in diameter.
  9. Spread a thin layer of the tomato sauce over each pizza base, leaving a small border around the edges.
  10. Top with pieces of vegan mozzarella and fresh basil leaves.
  11. Carefully transfer the pizza onto the preheated pizza stone or baking tray and bake for about 8-10 minutes or until the crust is golden and crispy.
  12. Remove from the oven, add more fresh basil if desired, slice and serve immediately.
