Ingredients
- All-purpose flour - 200 grams
- Warm water (about 40°C) - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 10 ml
- Salt - 4 grams
- Canned San Marzano tomatoes - 200 grams, crushed
- Fresh mozzarella cheese (kosher) - 125 grams, sliced
- Fresh basil leaves - 10 leaves
- Sugar - 1 gram
Steps
- In a small bowl, dissolve the active dry yeast and sugar in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat your oven to its highest setting (about 250°C) and place a pizza stone or baking sheet inside to heat up.
- Once the dough has risen, punch it down and roll it out on a floured surface into a 10-inch circle.
- Transfer the rolled dough to a piece of parchment paper for easy handling.
- Spread the crushed San Marzano tomatoes evenly over the dough, leaving a small border around the edges.
- Arrange the sliced mozzarella evenly on top of the tomatoes.
- Carefully transfer the pizza (on the parchment) to the preheated pizza stone or baking sheet.
- Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
- Remove the pizza from the oven and top with fresh basil leaves. Drizzle with a little olive oil before slicing and serving.
