Ingredients

  • Active dry yeast - 5 grams
  • Olive oil - 10 ml
  • Salt - 4 grams
  • Canned San Marzano tomatoes - 200 grams, crushed
  • Fresh mozzarella cheese (kosher) - 125 grams, sliced
  • Fresh basil leaves - 10 leaves
  • Sugar - 1 gram

Steps

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water and let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat your oven to its highest setting (about 250°C) and place a pizza stone or baking sheet inside to heat up.
  6. Once the dough has risen, punch it down and roll it out on a floured surface into a 10-inch circle.
  7. Transfer the rolled dough to a piece of parchment paper for easy handling.
  8. Spread the crushed San Marzano tomatoes evenly over the dough, leaving a small border around the edges.
  9. Arrange the sliced mozzarella evenly on top of the tomatoes.
  10. Carefully transfer the pizza (on the parchment) to the preheated pizza stone or baking sheet.
  11. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  12. Remove the pizza from the oven and top with fresh basil leaves. Drizzle with a little olive oil before slicing and serving.
