- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Tomato sauce - 100 grams
- Fresh basil - 10 grams
- Vegan mozzarella cheese - 100 grams
- Zucchini - 50 grams, thinly sliced
- Mushrooms - 50 grams, sliced
- Red onion - 30 grams, thinly sliced
- Black pepper - to taste
- Vegetable oil - for frying
Steps
- In a small bowl, combine warm water and active dry yeast, letting it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling by combining tomato sauce, sliced zucchini, mushrooms, red onion, fresh basil, and black pepper in a bowl.
- Once the dough has risen, divide it into two equal portions and roll each into a circle about 20 cm in diameter.
- Spread the filling mixture evenly over half of each dough circle, leaving a small border. Top with vegan mozzarella cheese.
- Fold the dough over to create a half-moon shape and press the edges together to seal securely.
- Heat vegetable oil in a deep pan over medium heat. Fry each pizza for about 3-4 minutes on each side until golden brown and crispy.
- Remove from oil and drain on paper towels before serving hot, garnished with extra fresh basil if desired.
