- Potatoes - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, thinly sliced
- Zucchini - 1 small, thinly sliced
- Red bell pepper - 1 small, thinly sliced
- Cherry tomatoes - 150 grams, halved
- Nutritional yeast - 2 tablespoons
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Peel and grate the potatoes into a large bowl. Squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the grated potatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Mix well.
- Spread the potato mixture evenly onto a baking sheet lined with parchment paper, forming a round crust about 1 cm thick.
- Bake the potato crust in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- While the crust is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and sauté for 3-4 minutes until translucent.
- Add the zucchini and red bell pepper to the skillet and cook for another 5 minutes until slightly softened.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes. Season with salt and pepper, then remove from heat.
- Once the potato crust is ready, remove it from the oven and sprinkle the nutritional yeast over the top.
- Spread the sautéed vegetable mixture evenly over the crust, then return to the oven for another 10-15 minutes.
- Once done, remove from the oven, garnish with fresh basil, and let it cool for a few minutes before slicing. Serve warm.
