Ingredients

  • Potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Red bell pepper - 1 small, thinly sliced
  • Cherry tomatoes - 150 grams, halved
  • Nutritional yeast - 2 tablespoons
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and grate the potatoes into a large bowl. Squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine the grated potatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Mix well.
  4. Spread the potato mixture evenly onto a baking sheet lined with parchment paper, forming a round crust about 1 cm thick.
  5. Bake the potato crust in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  6. While the crust is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and sauté for 3-4 minutes until translucent.
  7. Add the zucchini and red bell pepper to the skillet and cook for another 5 minutes until slightly softened.
  8. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes. Season with salt and pepper, then remove from heat.
  9. Once the potato crust is ready, remove it from the oven and sprinkle the nutritional yeast over the top.
  10. Spread the sautéed vegetable mixture evenly over the crust, then return to the oven for another 10-15 minutes.
  11. Once done, remove from the oven, garnish with fresh basil, and let it cool for a few minutes before slicing. Serve warm.
