- Fresh rosemary - 1 tablespoon, chopped
- Cherry tomatoes - 150 grams, halved
- Red onion - 50 grams, thinly sliced
- Olives - 50 grams, pitted and sliced
- Arugula - 30 grams
Steps
- In a mixing bowl, combine chickpea flour, water, salt, black pepper, and olive oil. Whisk until smooth and let it rest for 15 minutes.
- Preheat the oven to 220°C (428°F).
- Add chopped rosemary to the batter and mix well.
- Grease a baking sheet or a round pizza pan with olive oil, then pour the chickpea batter evenly onto the pan.
- Bake the flatbread in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
- Remove the flatbread from the oven and top with halved cherry tomatoes, sliced red onion, and olives.
- Return to the oven for an additional 5-7 minutes to warm the toppings.
- Once cooked, remove from the oven and let cool for a minute. Top with fresh arugula before serving.
