  • Chickpea flour - 150 grams
  • Water - 300 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Olives - 50 grams, pitted and sliced
  • Arugula - 30 grams

Steps

  1. In a mixing bowl, combine chickpea flour, water, salt, black pepper, and olive oil. Whisk until smooth and let it rest for 15 minutes.
  2. Preheat the oven to 220°C (428°F).
  3. Add chopped rosemary to the batter and mix well.
  4. Grease a baking sheet or a round pizza pan with olive oil, then pour the chickpea batter evenly onto the pan.
  5. Bake the flatbread in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
  6. Remove the flatbread from the oven and top with halved cherry tomatoes, sliced red onion, and olives.
  7. Return to the oven for an additional 5-7 minutes to warm the toppings.
  8. Once cooked, remove from the oven and let cool for a minute. Top with fresh arugula before serving.
