  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh basil leaves - a handful (for garnish)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly.
  4. On a floured surface, roll out the pizza dough into a 10-inch circle and transfer it to a pizza stone or baking sheet.
  5. Spread the ricotta cheese evenly over the pizza base, leaving a small border around the edges.
  6. Evenly distribute the sautéed spinach over the ricotta, and sprinkle the shredded mozzarella cheese on top.
  7. Drizzle the remaining tablespoon of olive oil over the pizza, and season with salt, black pepper, and red pepper flakes if using.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  9. Remove from the oven and sprinkle with grated Parmesan cheese and fresh basil leaves before slicing and serving.
