- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, thinly sliced
- Salt - to taste
- Black pepper - to taste
- Oregano - 1 teaspoon
Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into thin rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water, then pat them dry with a paper towel.
- In a bowl, toss the eggplant with 1 tablespoon of olive oil, minced garlic, black pepper, and oregano.
- Spread the eggplant slices on a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, flipping halfway through.
- While the eggplant is roasting, roll out the pizza dough on a floured surface into a 10-inch round.
- Transfer the rolled-out dough to a pizza stone or baking sheet.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Once the eggplant is roasted, arrange the slices on top of the sauce, followed by the halved cherry tomatoes and sliced red onion.
- Drizzle the remaining tablespoon of olive oil over the toppings and season with salt and pepper to taste.
- Bake in the oven for 15-20 minutes, or until the crust is golden brown and crispy.
- Remove the pizza from the oven, garnish with fresh basil leaves, and let it cool for a few minutes before slicing.
