  • Olive oil - 2 tablespoons
  • Yellow onions - 2 medium, thinly sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh rosemary - 1 teaspoon, chopped
  • Vegan mozzarella cheese - 100 grams
  • Tomato sauce - 100 grams
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 220°C (428°F) and place a pizza stone or baking sheet inside to heat.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sprinkle with salt and black pepper. Cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes.
  3. Once the onions are caramelized, stir in the balsamic vinegar and fresh rosemary. Remove from heat and set aside.
  4. Roll out the pizza dough on a floured surface to your desired thickness, about 10 inches in diameter.
  5. Transfer the rolled-out dough onto a piece of parchment paper. Spread the tomato sauce evenly over the surface of the dough, leaving a small border around the edges.
  6. Evenly distribute the caramelized onions over the tomato sauce, then sprinkle the vegan mozzarella cheese on top.
  7. Carefully transfer the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes or until the crust is golden and the cheese is melted.
  8. Remove the pizza from the oven and let it cool for a minute. Garnish with fresh basil leaves before slicing and serving.
