Ingredients

  • Cauliflower - 300 grams
  • Ground flaxseed - 2 tablespoons
  • Water - 6 tablespoons
  • Almond flour - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato sauce - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams
  • Red onion - 50 grams, thinly sliced
  • Olives - 30 grams, sliced
  • Oregano - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the cauliflower florets until they resemble rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  3. In a bowl, mix the ground flaxseed with water and let it sit for 5 minutes to thicken.
  4. In a large mixing bowl, combine the cauliflower, almond flour, nutritional yeast, garlic powder, salt, flaxseed mixture, and 1 tablespoon of olive oil. Mix until a dough forms.
  5. Spread the cauliflower dough onto the prepared baking sheet, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust for 20 minutes or until golden brown and firm.
  7. While the crust is baking, prepare the toppings. In a small bowl, mix the tomato sauce with oregano and black pepper.
  8. Remove the crust from the oven and spread the tomato sauce evenly over it.
  9. Top with spinach, cherry tomatoes, red onion, and olives.
  10. Drizzle the remaining tablespoon of olive oil over the toppings and return the pizza to the oven for another 10-15 minutes until the vegetables are tender.
  11. Once done, remove from the oven, let cool for a few minutes, slice, and serve.
