- Cauliflower - 300 grams
- Ground flaxseed - 2 tablespoons
- Water - 6 tablespoons
- Almond flour - 100 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato sauce - 150 grams
- Cherry tomatoes - 100 grams, halved
- Spinach - 50 grams
- Red onion - 50 grams, thinly sliced
- Olives - 30 grams, sliced
- Oregano - 1 teaspoon
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a food processor, pulse the cauliflower florets until they resemble rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the ground flaxseed with water and let it sit for 5 minutes to thicken.
- In a large mixing bowl, combine the cauliflower, almond flour, nutritional yeast, garlic powder, salt, flaxseed mixture, and 1 tablespoon of olive oil. Mix until a dough forms.
- Spread the cauliflower dough onto the prepared baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust for 20 minutes or until golden brown and firm.
- While the crust is baking, prepare the toppings. In a small bowl, mix the tomato sauce with oregano and black pepper.
- Remove the crust from the oven and spread the tomato sauce evenly over it.
- Top with spinach, cherry tomatoes, red onion, and olives.
- Drizzle the remaining tablespoon of olive oil over the toppings and return the pizza to the oven for another 10-15 minutes until the vegetables are tender.
- Once done, remove from the oven, let cool for a few minutes, slice, and serve.
