Ingredients

  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Tomato sauce - 100 grams
  • Zucchini - 50 grams, thinly sliced
  • Red bell pepper - 50 grams, thinly sliced
  • Red onion - 30 grams, thinly sliced
  • Black olives - 30 grams, pitted and sliced
  • Fresh basil - a handful, chopped
  • Oregano - 1 teaspoon
  • Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat your oven to 250°C (482°F) and place a pizza stone or baking sheet inside to heat up.
  6. Once the dough has risen, punch it down and roll it out into a thin circle (about 30 cm in diameter).
  7. Transfer the rolled dough onto a piece of parchment paper. Spread the tomato sauce evenly over the base.
  8. Layer the sliced zucchini, red bell pepper, red onion, and black olives on top of the sauce. Sprinkle with oregano and chopped basil.
  9. If using, sprinkle nutritional yeast over the vegetables for a cheesy flavor.
  10. Carefully transfer the pizza (with parchment paper) onto the preheated stone or baking sheet.
  11. Bake for 10-12 minutes or until the crust is golden brown and crispy.
  12. Remove from the oven, let cool for a minute, slice, and serve hot.
