- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Salt - 5 grams
- Olive oil - 10 ml
- Tomato passata - 100 grams
- Zucchini - 50 grams, thinly sliced
- Bell pepper - 50 grams, sliced
- Red onion - 30 grams, thinly sliced
- Black olives - 30 grams, pitted and sliced
- Fresh basil - a handful
- Dried oregano - 1 teaspoon
- Fresh arugula - a handful for topping
Steps
- In a bowl, combine warm water and active dry yeast; let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour, or until doubled in size.
- Preheat the oven to 250°C (482°F) and place a baking stone or an inverted baking sheet inside to heat.
- Once the dough has risen, punch it down and shape it into a rectangular shape approximately 30x20 cm.
- Transfer the shaped dough onto a piece of parchment paper. Spread the tomato passata evenly over the surface.
- Evenly distribute the zucchini, bell pepper, red onion, and black olives on top of the tomato sauce.
- Sprinkle the dried oregano over the pizza and drizzle a little olive oil on top.
- Carefully transfer the pizza on the parchment paper to the preheated baking stone or sheet and bake for about 12-15 minutes until the crust is golden and crispy.
- Remove from the oven, top with fresh basil and arugula, slice, and serve immediately.
