Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Olive oil - 10 ml
  • Tomato passata - 100 grams
  • Zucchini - 50 grams, thinly sliced
  • Bell pepper - 50 grams, sliced
  • Red onion - 30 grams, thinly sliced
  • Black olives - 30 grams, pitted and sliced
  • Fresh basil - a handful
  • Dried oregano - 1 teaspoon
  • Fresh arugula - a handful for topping

Steps

  1. In a bowl, combine warm water and active dry yeast; let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour, or until doubled in size.
  5. Preheat the oven to 250°C (482°F) and place a baking stone or an inverted baking sheet inside to heat.
  6. Once the dough has risen, punch it down and shape it into a rectangular shape approximately 30x20 cm.
  7. Transfer the shaped dough onto a piece of parchment paper. Spread the tomato passata evenly over the surface.
  8. Evenly distribute the zucchini, bell pepper, red onion, and black olives on top of the tomato sauce.
  9. Sprinkle the dried oregano over the pizza and drizzle a little olive oil on top.
  10. Carefully transfer the pizza on the parchment paper to the preheated baking stone or sheet and bake for about 12-15 minutes until the crust is golden and crispy.
  11. Remove from the oven, top with fresh basil and arugula, slice, and serve immediately.
