  • Pizza dough - 250 grams
  • Fresh tomatoes - 200 grams, sliced
  • Fresh basil leaves - 20 grams
  • Cashews - 100 grams, soaked for 4 hours
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. In a blender, combine soaked cashews, nutritional yeast, lemon juice, minced garlic, a pinch of salt, and a little water. Blend until smooth and creamy to create the cashew cheese.
  5. Spread the cashew cheese evenly over the pizza dough.
  6. Arrange the sliced tomatoes on top of the cashew cheese, overlapping slightly.
  7. Drizzle olive oil over the tomatoes and season with salt and black pepper.
  8. Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
  9. Remove from the oven and immediately scatter fresh basil leaves on top.
  10. Slice and serve hot.
