- Cashews - 100 grams, soaked for 4 hours
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (425°F).
- Roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- In a blender, combine soaked cashews, nutritional yeast, lemon juice, minced garlic, a pinch of salt, and a little water. Blend until smooth and creamy to create the cashew cheese.
- Spread the cashew cheese evenly over the pizza dough.
- Arrange the sliced tomatoes on top of the cashew cheese, overlapping slightly.
- Drizzle olive oil over the tomatoes and season with salt and black pepper.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
- Remove from the oven and immediately scatter fresh basil leaves on top.
- Slice and serve hot.
