  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 50 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Mozzarella cheese - 100 grams, shredded
  • Fresh basil - a handful
  • Balsamic glaze - for drizzling

Steps

  1. In a bowl, mix the warm water with the active dry yeast and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat the oven to 220°C (428°F) and line a baking tray with parchment paper.
  6. Once the dough has risen, gently stretch it out on the prepared baking tray to fit the shape of the tray.
  7. Top the stretched dough with the halved cherry tomatoes, sliced zucchini, diced red bell pepper, and sliced red onion evenly across the surface.
  8. Sprinkle the shredded mozzarella cheese over the vegetables.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
  10. Remove from the oven, garnish with fresh basil leaves, and drizzle with balsamic glaze before slicing into squares and serving.
