Ingredients

  • Pizza dough - 250 grams
  • Artichoke hearts (canned or jarred) - 150 grams, drained and sliced
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh arugula - 30 grams (for topping)

Steps

  1. Preheat the oven to 250°C (482°F) and place a pizza stone or baking tray inside to heat.
  2. Roll out the pizza dough on a floured surface to a 10-inch round, about 5mm thick.
  3. In a bowl, mix the sliced artichoke hearts, minced garlic, olive oil, lemon juice, salt, and black pepper.
  4. Remove the heated pizza stone/tray from the oven and place the rolled-out dough on it.
  5. Spread the artichoke mixture evenly over the pizza dough, leaving a small border for the crust.
  6. Sprinkle the shredded mozzarella cheese on top of the artichoke mixture, followed by grated Parmesan cheese.
  7. Bake in the preheated oven for 10-12 minutes or until the crust is golden and the cheese is bubbling.
  8. Remove the pizza from the oven and let it cool for a minute.
  9. Top with fresh arugula and chopped parsley before slicing and serving.
