- Pizza dough - 250 grams
- Artichoke hearts (canned or jarred) - 150 grams, drained and sliced
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 30 grams, grated
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh arugula - 30 grams (for topping)
Steps
- Preheat the oven to 250°C (482°F) and place a pizza stone or baking tray inside to heat.
- Roll out the pizza dough on a floured surface to a 10-inch round, about 5mm thick.
- In a bowl, mix the sliced artichoke hearts, minced garlic, olive oil, lemon juice, salt, and black pepper.
- Remove the heated pizza stone/tray from the oven and place the rolled-out dough on it.
- Spread the artichoke mixture evenly over the pizza dough, leaving a small border for the crust.
- Sprinkle the shredded mozzarella cheese on top of the artichoke mixture, followed by grated Parmesan cheese.
- Bake in the preheated oven for 10-12 minutes or until the crust is golden and the cheese is bubbling.
- Remove the pizza from the oven and let it cool for a minute.
- Top with fresh arugula and chopped parsley before slicing and serving.
