Ingredients

  • Chicken breast - 250 grams, minced
  • Basil pesto - 4 tablespoons
  • Garlic - 1 clove, minced
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Burger buns - 2, toasted
  • Ripe tomato - 1, sliced
  • Fresh mozzarella - 100 grams, sliced
  • Fresh basil leaves - a handful

Steps

  1. In a bowl, combine the minced chicken, 2 tablespoons of basil pesto, minced garlic, grated Parmesan cheese, salt, and black pepper. Mix well until fully incorporated.
  2. Divide the mixture into two equal portions and shape them into patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
  4. While the patties are cooking, prepare the burger buns by toasting them lightly.
  5. Once the patties are done, place each one on a toasted bun. Top with a slice of fresh mozzarella, a slice of tomato, and a few fresh basil leaves.
  6. Spread the remaining basil pesto on the top bun, then place it on top of the burger. Serve immediately.
