  • White fish fillets (such as cod or haddock) - 300 grams
  • Cherry tomatoes - 150 grams
  • Zucchini - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, arrange the sliced zucchini and cherry tomatoes at the bottom.
  3. Drizzle 1 tablespoon of olive oil over the vegetables and season with salt and pepper.
  4. Place the white fish fillets on top of the vegetables.
  5. In a small bowl, mix the minced garlic, chopped basil, lemon juice, and the remaining tablespoon of olive oil.
  6. Spread the garlic-basil mixture evenly over the fish fillets.
  7. Season the fish with additional salt and pepper if desired.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through and flakes easily with a fork.
  10. Serve hot, garnished with extra basil if desired.
