  • Water - 100 ml
  • Sugar - 50 grams
  • Cinnamon stick - 1
  • Star anise - 1
  • Clove - 2
  • Lemon zest - from 1 lemon
  • Vanilla extract - 1 teaspoon

Steps

  1. Peel the pears carefully, leaving the stems intact, and set aside.
  2. In a medium saucepan, combine the red wine, water, sugar, cinnamon stick, star anise, cloves, lemon zest, and vanilla extract.
  3. Bring the mixture to a simmer over medium heat, stirring until the sugar has dissolved.
  4. Once the mixture is simmering, gently add the pears to the saucepan, ensuring they are mostly submerged in the liquid.
  5. Cover the saucepan and simmer the pears for about 20-25 minutes, or until they are tender but still hold their shape, turning them halfway through.
  6. Remove the pears from the saucepan and set aside to cool slightly.
  7. Increase the heat and reduce the poaching liquid for another 10 minutes until it thickens slightly into a syrup.
  8. Serve the poached pears warm or chilled, drizzled with the reduced syrup.
