- Cinnamon stick - 1
- Star anise - 1
- Clove - 2
- Lemon zest - from 1 lemon
- Vanilla extract - 1 teaspoon
Steps
- Peel the pears carefully, leaving the stems intact, and set aside.
- In a medium saucepan, combine the red wine, water, sugar, cinnamon stick, star anise, cloves, lemon zest, and vanilla extract.
- Bring the mixture to a simmer over medium heat, stirring until the sugar has dissolved.
- Once the mixture is simmering, gently add the pears to the saucepan, ensuring they are mostly submerged in the liquid.
- Cover the saucepan and simmer the pears for about 20-25 minutes, or until they are tender but still hold their shape, turning them halfway through.
- Remove the pears from the saucepan and set aside to cool slightly.
- Increase the heat and reduce the poaching liquid for another 10 minutes until it thickens slightly into a syrup.
- Serve the poached pears warm or chilled, drizzled with the reduced syrup.
