Ingredients

  • Red bell pepper - 2 medium

  • Fresh basil - 5 leaves

  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the red bell peppers and cut them in half lengthwise, removing the seeds and stems.
  3. Place the halved peppers on a baking sheet, cut side up.
  4. Peel and thinly slice the garlic cloves, then sprinkle them evenly over the peppers.
  5. Drizzle the olive oil and balsamic vinegar over the peppers, then season with salt and black pepper.
  6. Roast in the preheated oven for about 20-25 minutes, or until the peppers are tender and slightly charred.
  7. Once roasted, remove from the oven and let them cool slightly.
  8. Chop the fresh basil and sprinkle it over the roasted peppers before serving.
