- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Dried oregano - 1 teaspoon
- Fresh basil - a handful, chopped
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Combine the cooked penne pasta with the chicken and vegetable mixture in the skillet. Toss well to combine.
