  • Parmesan cheese (grated) - 30 grams
  • Extra virgin olive oil - 50 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams (for garnish)

Steps

  1. Cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, prepare the pesto. In a food processor, combine the pistachios, basil leaves, garlic, Parmesan cheese, lemon juice, salt, and black pepper.
