- Black pepper - to taste
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Spread the diced eggplant on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for about 20 minutes until tender and slightly caramelized.
- While the eggplant is roasting, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the canned diced tomatoes to the skillet, stir well, and let simmer for 5 minutes. Season with salt and pepper to taste.
- Once the eggplant is done roasting, add it to the skillet with the tomato sauce. Stir in the chopped basil and cook for an additional 2 minutes.
