  • Gorgonzola cheese - 100 grams, crumbled
  • Heavy cream - 150 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Walnuts - 30 grams, chopped (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Reduce the heat to low and add the heavy cream to the skillet. Stir in the crumbled Gorgonzola cheese, allowing it to melt and create a smooth sauce. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
  4. Season the sauce with salt and black pepper to taste. Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce.
  5. Remove from heat and stir in the chopped parsley and walnuts if using. Serve hot, garnishing with additional parsley and Gorgonzola if desired.
